It’s interesting how genes work – watching your kids grow and having your features and quirks pop out in your offspring. My daughter Cait got my foodie gene. While my son will simply say he is hungry, Cait will state what specifically she would love to eat at that specific moment. Like this weekend when she said she would love a cheesy dip. She loves chips and salsa so I thought a white queso would be perfect. We always have cheese in the house and of course chips and salsa, so we got right to it!
We grated some cheese and warmed some milk and cream, added some seasonings and then enjoyed a warm, slightly spicy cheesy dip with chips for lunch. Great idea Cait!
4 oz fontina, shredded
1/2 lb white american cheese, cut into quarters
1 cup half and half (or 1/2 cup milk and 1/2 cup heavy cream)
a pinch of fresh ground nutmeg
1 tsp chili powder
salt and pepper to taste
a couple tbs of salsa or more to taste
Heat the half and half mixture until simmering. While whisking, slowly add the american cheese quarters, then the shredded fontina. Continue whisking until smooth. Add the seasoning and stir to combine.
Serve in a bowl with a garnish of salsa and chips on the side.
This would be awesome with pickled jalapenos and some fresh chopped cilantro!
