This works as a healthy side dish to almost any meal – chicken, pork, pasta – or it can be the star when paired with sausage and farfalle pasta or added to a sandwich with Crispy Chicken and provolone cheese.
1 bunch broccoli rabe
2 tbs. olive oil
1 large clove of garlic, peeled and thinly sliced
kosher salt, about 1/2 tsp. or to taste
red pepper flakes, a generous pinch, or more to taste
In a large pot bring about 3 – 4 quarts of water to a boil. Clean and cut the broccoli rabe by trimming ends and cutting into 2 inch pieces.
Add the broccoli rabe to the boiling water and boil for 1 minute. Remove the broccoli rabe and drain.
Heat a saute pan over medium heat and add the olive oil. Add the garlic to the pan and saute until fragrant, about one minute. Add the broccoli rabe to the pan with the kosher salt and the red pepper flakes. Toss to coat.
Place a lid on the pan to soften the broccoli rabe and continue cooking for about 5 to 8 minutes. The broccoli rabe should be tender but not mushy when tested with a pairing knife.
