Eat your veggies! You won’t have to say that twice with these yummy oven fries. In my house they disappear before they are plated.
My son runs from vegetables, so I like to try to come up with veggie recipes that he will eat. This is definitely one. They are creamy and slightly sweet and pair so well with the bite of the tangy vinegar. These will be your new go to chip!
4 white sweet potatoes (these were grown locally in New Jersey!)
2 to 3 tbs. olive oil
2 tsps. kosher salt
1 tsp. pepper
white balsamic vinegar or your favorite vinegar
2 tbs. chopped fresh parsley, Italian flat leaf or curly
Preheat oven to 375 degrees.
Clean and scrub potatoes. Cut each potato into 8 wedges. Place on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat. Make sure they are in a single layer so they can brown.
Place in the oven and cook for 25 to 30 minutes checking them and giving them a toss at least once during the cooking time. They are ready when fork tender.
Sprinkle with a pinch of salt, the chopped parsley and drizzle with the vinegar.
