It’s tough to come up with yummy recipes, especially on week nights when time is limited and left overs are scarce. Do you really want another pizza delivery?

Quick pasta recipes work perfectly here. This recipe is a bonus because it tastes like the really good Italian restaurant penne that you order out. The downside – now that you know how to make it you need to find a new favorite at that Italian restaurant.

You can use a good quality jarred marinara, but I have an Easy Marinara recipe that I use for this recipe – I will share it soon.

3 cups marinara sauce

3/4 cup vodka

1/2 cup heavy cream

1/3 cup Parmesan cheese, grated

about 1 handful torn fresh basil leaves (optional)

salt and pepper to taste

Bring your pasta water to a boil and salt it generously.

In a sauce pan over medium heat re-heat the marinara. If using a jarred sauce, taste and add salt and pepper if needed. Add the vodka and simmer 15 to 20 minutes.

In the meantime add the penne to the boiling salted water and cook as directed for al dente.

Add the cream to the marinara and vodka sauce and stir to combine. Cook another 5-8 minutes. Off of the heat add the Parmesan and torn basil leaves and toss to combine.

To serve spoon sauce over the cooked pasta in individual pasta bowls. Top with extra cheese.
