Recently while my daughter was waiting, “patiently”, to eat, she asked, “Mom, why do you have to take pictures of everything we eat? I’m hungry!”
Just to be clear, I do not take pictures of everything we eat. I make a lot of repeats, or things I have posted already and make again and again because they are good recipes, which means they are yummy, most of my family will eat it, don’t have to hunt and de-feather anything (read “it’s easy to make).
When I first started this blog people asked what I was doing with it. Honestly I enjoy cooking and baking and enjoy writing so it was a pretty easy thing to start up. I wanted a creative outlet, really. Looking back from this side, 10 months in, I have a journey of food that I have made for and shared with family and friends. If I got someone try something new or add a new recipe to their families’ favorites that’s extra!
I don’t usually post on back to back nights like this, but this recipe was so good I had to share it before I took some time off. Time off from blogging, not from cooking and eating good food. We are going to visit my brother at his beach house and we will be collaborating on some recipes that I will share soon!
So, back to grilling – love to grill, especially dessert! Peaches are in season and are perfect to grill because of their size. Just split, toss with some sugar and spices and leave on medium high for 5 minutes or so. Delicious alone but better with vanilla ice cream and a sprig of mint!
For two people:
1 peach split in half, pit removed
2 tbs brown sugar
pinch kosher salt
1/2 tsp pure vanilla extract
1/4 tsp cinnamon
Combine ingredients in a bowl and toss peach halves to coat. Let sit while you heat the grill to about 375.
Place peaches skin side down and char. Will take about 5 minutes or so. Flip and char the other side.
Place halves in a bowl with a scoop of ice cream and some fresh mint.
